Rabbits and Bacon in Wine Sauce
Ingredients
- 1 rabbit cut into cubes
- 2-4 table spoons of butter
- Salt and pepper
- 1 cup flour
- 2-4 table spoons of olive oil
- 1 medium size red onion sliced thinly
- 4 pieces of bacon sliced
- 1.5 cups white wine preferably dry white wine
- ½ cup water
- 1 tablespoon tomato paste
- 1 bay leaf
- 1 garlic clove minced
- 2 cups mushrooms
- Chili powder
- 1 egg
Directions
- On a plate place your flour, add salt, pepper, and chili powder and mix
- Now crack one egg in a bowl and stir
- Place your rabbit in the egg and then cover in the flour
- In a frying pan heat the olive oil, and 1 table spoon of butter
- Brown ¼ the garlic clove in the oil and then fry your rabbit on low flames
- Once the rabbit is golden brown take off the flames and set aside
- Add the bacon and onions to the original pan and fry again on low flame until the onions are browned remember you might need to add more butter and oil so the rabbit doesn’t burn
- Add your white wine, water, tomato paste, butter, garlic, bay leaf and cook for 2-5 minutes on low flame
- Add your rabbit back to the pot and simmer the liquid
- After about 30-45 minutes of simmering the rabbit should be tender
- Once tender add your mushrooms and continue simmering for 5-10 minutes
- Once the mushrooms are done and the rabbit is tender enjoy your rabbit in a mushroom sauce
- Serve over rice to create a great rabbit dish with tons of flavor enjoy!
