Alligator Crawfish and Sausage Casserole

Ingredients

1 lb of alligator chopped into cubes
1 lb Andouille Sausage chopped
1 lb crayfish tail chopped
2.5 cups of rice
2 cans of tomatoes with green chilies
3 tablespoons of Creole seasoning
3 bay leaves
Salt and pepper to taste
4 tablespoons of butter or 1 stick of butter
5 peeled garlic minced
1 red onion chopped
1 cup of onion broth
1 can of beef consommé

Cooking it all

1. Preheat the oven to 350 degrees
2. Cook your rice
3. Generally to cook rice 2.5 cups will need 5 cups of water, some salt, rice vinegar, and small amount of oil
4. Once the rice is boiling turn it down to a simmer until no water remains
5. Once your rice is cooked add it the casserole dish
6. Add all the rest of the ingredients to the casserole dish
7. Mix the ingredients up in the dish
8. Place this dish in the oven
9. Cook for 1 hour, after 30 minutes keep mixing the ingredients so the dish cooks all the way thru
10. Enjoy this taste dish, if you want to spice it up add red pepper flakes

Alligator Nuggets

Ingredients

1 lbs Alligator Meat cut into cubes
Fish batter
1 cup hot sauce
1 cup buttermilk
2 table spoons Creole seasoning
Salt and pepper
Remoulade or ranch dressing for sauce
Oil

Cooking it all

1. Season the meat with salt and pepper
2. Soak the meat in a bag or bowl that has butter milk, and hot sauce combine
3. Add Tonys seasoning to the bag and let the meat soak in the bag or bowl for 30 – 1 hour
4. Take the meat and dip it in the fish batter covering the whole meat in batter
5. Heat the oil to around 350 degrees
6. Fry the battered alligator or place in the deep fryer
7. They should cook for around 2-5 minutes
8. Enjoy your nuggets
